Stay on the Wellness Bandwagon With a Challenge

January is Wellness Month here at VancouverMom.ca, but we’re not the only ones focusing on health and well-being. Everywhere you look there are programs and challenges designed to help you get 2013 off to the best start possible. Many Vancouver moms started the New Year with plans to make better choices, but as with all resolutions, it’s all too easy to let this one fall by the wayside. This is where joining forces with other people can help keep you on track.

Whole Foods Market is launching their Health Starts Here 28-Day Challenge on January 16, 2013. The idea is to support you in your own wellness goals. The program is based on their four pillars of healthy eating. Participants will receive weekly meal plans and grocery lists. They’ll attend weekly meet-ups, and cooking and exercise classes. In stores, the Health Starts Here label will help everyone shop, and at the end there will be a celebratory dinner. There are also some great prizes. There’s a $30 membership fee, but all proceeds are donated to Quest Food Exchange, so it’s for a good cause.

Healthy Recipe

Whole Foods has passed along a healthy recipe, to get you started on your own wellness quest. It’s vegan, gluten-free, dairy-free and low fat, so pretty much everyone can eat and enjoy it.

Simple Black Bean Soupwellness challenge whole foods market vancouver

Ingredients:
1 pound (2 1/2 cups) dried black beans, rinsed
2 medium onions, chopped
1 large red bell pepper, seeded and chopped
4 cloves garlic, finely chopped
1 tablespoon ground cumin
1 teaspoon ground chipotle pepper
2 tablespoons chopped fresh cilantro
2 tablespoons nutritional yeast
1 tablespoon fresh lime juice
1/2 ripe avocado, chopped

Preparation:
Soak the beans overnight or 6 to 8 hours prior to cooking. Drain and rinse.

In a large pot, bring 1/2 cup water to a simmer over medium-high heat. Add onions, bell pepper and garlic and cook, stirring frequently, until onions are translucent and beginning to brown, about 10 minutes. Stir in cumin and chipotle and cook 1 minute, stirring. Add drained beans and 10 cups water. Bring soup to a boil, then lower to a simmer and cook, uncovered, for 1 1/2 to 2 hours, until beans are tender. Remove 4 cups soup and carefully purée in a blender. Return purée to pot and stir in cilantro, nutritional yeast and lime juice. Spoon into bowls for serving and garnish with avocado.
